I'm sorry that I am so late summarizing. I got a number of useful
responses, but I wanted to test before I sent out a summary.
Unfortunately, the system that I planned to use for testing has failed
and I am still waiting on a replacement. To compound the issue, my
workstation cratered last week and I lost my mail archives for the
last month.

Based on what I can remember from all the responses I received:

Linux can work as a jumpstart boot server provided that the kernel is
built with NFS v3. I hope to have a machine soon to test with.
